Pronunciation of the word differs by area. In Northern England and Scotland, the word rhymes with “gone” whereas Southern England, Wales, East Anglia, Ireland and the United States’ pronunciation, rhymes with “tone”. The original scone was flat, round, made on a griddle and usually formed to fill a medium-sized plate. It was then cut into triangular-shaped sections for serving. Originally, they were prepared with oats, barley or wheat. As baking powder became available, scones were more often baked in the oven, a leavened baked good as we know it today. The flavours can be savoury; made with herbs, cheese, onion, bacon; or they can be sweet, filled with a variety of fruits and/or topped with butter, jam, lemon curd or cream. Although they are the most popular in Scotland, Wales, Ireland and England, there are regional varieties of this Afternoon Tea mainstay, in North and South America, Australia, New Zealand, Japan and South Africa.
