8/6/2021 0 Comments History of MacaronsMacarons were first produced in Venetian monasteries since about the 8th century A.D. The French largely take credit as having introduced the delicate tiny sandwiches known as macarons. It was Catherine de’ Medici, a noblewoman from Florence, who later became the French queen when she married Henri II. She brought her chefs and bakers with her to France and a variety of pastries were introduced to the French population. The first documented debut of this sweet little biscuit in Europe, was during the Middle Ages. In those days, they were not at all resembling the macaron of modern times; they were simply baked with a mixture of egg whites, sugar and almonds; the exterior had a crunchy texture and a soft interior. There were no varieties of flavours and fillings; they were simply called “priest’s belly buttons”, hardly a delicious-sounding delicacy as the world has come to know them. The word macaron is a derivative from the Italian word, maccherone, which means fine dough. According to legend, King Louis XIV dined on the delicate macaron at his wedding in 1660. Apparently a pastry chef from the Basque country in France, introduced the King to these fluffy light treats. In 1792, two Carmelite nuns, who later became known as the “Macaron Sisters”, baked and sold them in order to support themselves during the French Revolution. In the early 1900’s, the macaron as we know it today, was created by Pierre Desfontaines, second cousin to Louis Ernest Ladurée, the founder of La Maison Ladurée. He was a pastry chef at a now renowned and distinguished Parisian café, Ladurée. Desfontaines began filling the cookies with ganache; crème ganache jam, compote and buttercream. Macarons became an instant success. This widely-known and esteemed café, known for its macarons for approximately 150 years, continues to be the leading edge creator and distributor of macarons, by adding new colours and flavours seasonally. The recipe remains a secret and is unchanged for decades. Ladurée is the world’s most famous creator of these dainty morsels, selling more than 15,000 per day! 🤩 #icymi there is a Vancouver location of Ladurée on Robson Street. J'adore les macarons!
